Recipe for our famous Ossobucco:
12 pieces of ossobucco
4 carrots (diced 1/4 inch)
8 ribs celery (diced 1/4 inch)
1 onion (diced 1/4 inch)
salt, pepper, oregano, olive oil, 3 bay leaves
2 cups water
2 cups red wine
30 marinara sauce
chicken stock to cover
Season veal shanks w/ salt, pepper, oregano, & olive oil and arrange on sheet pan, roast in oven for 45 minutes (until dark brown)
In a mixing bowl season all the diced vegetables with oil, salt, pepper, & oregano. Remove the meat from the oven and cover them with the seasoned vegetables & add the water. Roast again for 45 minutes(until vegetables turn golden).
Remove from oven and arrange the meat in a 4inch roasting pan, cover the meat with the vegetables. Pour in the juice it gives out, the red wine, marinara & cover the meat with stock until the meat is barely covered. Cover with foil paper and cook in the oven for 3 hours.
